What is the difference between using the “log in with SimpleLogin” feature and just creating an account normally with a SimpleLogin alias?

It’s OAuth, so you’re logging in with SimpleLogin’s web authentication system rather than storing credentials (passwords) here on the forum.

what info does the service / website get when you log in with OAuth stuff (or what info does it not get)

It depends on the website and it depends on the authentication provider. Typically the OAuth provider will tell you when you use them to sign in:
