I want to keep a timeline of the places I go like Google Maps can, and export it to mac for my diary*. The maps app doesn’t have to be great, it just needs to keep a timeline in the background, I would still use Apple Maps as my main navigation app.
*(ideally I can automatically export it somehow, perhaps with the Shortcuts and Scriptable app but just tell me any apps with a timeline and export feature)
Why not just use Google Maps if it works well for you?

The timeline feature no longer works well for me. Have you heard about the transition to on-device only timeline history, meaning that timelines on desktop web will no longer work?!
My Google account on Maps had signed out for some reason, and after signing back in A bunch (but not all location history for some reason) was gone. I exported a JSON of whatever history was left. While I was already firm on wanting to leave Google Maps, now I want to even more.
Okay, but how is Apple Maps better?
I can probably predict your answer, so I will just point out that plenty of studies have proven that anonymous location databases are a pipe dream.
If you want a real privacy improvement, you need a technically sound solution, like using offline maps, etc.
This is good, the more things are done locally, the better.
Did you try requesting all of your data from Google? Your location history might still be there.
My Google takeout didn’t have it

Maybe try contacting their customer support page?
It’s been a few days since I posted and got no responses. This is why self-hosted services are better, I want to be in completely control of my data and not have online ones lose them.
