I’m switching from Proton to Tuta and from Linux to macOS. I used to make monthly email backups with Thunderbird on Linux.
Since I find Thunderbird lacking, I’m considering the Apple Mail client for importing .mbox and .eml files for easier searching and reading.
I have a couple of questions:

What does Apple collect when using the Apple Mail client with only local emails (no iCloud)? I’m wondering if it’s worth switching from Thunderbird if there are any privacy downsides.

How is Tuta’s Mac app and its offline functionality? If I lose access to my account, will it still keep the offline backup of my emails? Wonder I should keep exporting emails and importing them to an email client.
