It definitely does not defeat the purpose. Your phone is a lot more secure with GrapheneOS in the first place and secondly you can still limit all the permissions, access, tracking capabilities by a lot. This narrative is an unfortunate thing that is being repeated a lot but far from true.

This has been an issue for my family on stock Pixel and Samsung devices too, so I am fairly comfortable with saying it is just a Signal thing for some of us.
