You should update unless you have a valid reason not to like a buggy new version. Why don’t you want to update your apps?

Just upgrade everything. System apps, apps that you downloaded, the operating system itself etc.

Do you use normal android ? on wich brands of phone.
It is possible you mean, that you have disabled some google apss, and then they show up in your updates ?
