Firefox has a total cookie isolation by default now. I would like to see what cookies websites can see from their POV when this is not enabled.

Websites can only access cookies that they themselves set regardless of total cookie protection. The problem arises when a third party (such as google ads) is present on multiple websites and sets a cookie on one site before reading it back on another, linking your activity between the two. Total cookie protection isolates these third-party cookies by first-party site, so google ads cannot read back a cookie on site B that it set on site A, even though google ads is present on both.
