Yes, that’s what I’m using.
It’s worth noting that while SimpleX is probably the most secure and private messenger, it’s not as reliable or user friendly as Signal. If you are already struggling to convince your family / friends to adopt a secure messenger, I think it’s best to recommend Signal as the most usable option until SimpleX becomes more mature.
I think moving them once is difficult enough, if possible at all
But in long run, it is good to move away from services that lock you into a single platform.
The risk would be that you convince them to try SimpleX and they don’t like it. At which point they may be completely unwilling to try even Signal, despite it being just as easy to use as WhatsApp or iMessage.
Otherwise, I agree that SimpleX is almost certainly the future of secure and private messengers and is conceptually far superior to Signal.

If you don’t mind losing most of the contacts, or fall back to SMS (which is a big no no), then you can switch platform straight away.

Yes, I use it regularly. I have no problem using it, but it simply isn’t as streamlined as Signal is, and I have had reliability issues, especially with messages taking a long while to arrive. Not using FCM on Android is also a change for users. Depending on the device, you can expect a fair bit of battery drain if you want instant push notifications, which most users have come to expect.
Android Auto should work as expected as long as you grant the neccessary permissions for your use case (e.g. if you want wireless android auto, etc.) You can read the usage guide here:

I rely on Android Auto everyday. I used to rely on Carplay everyday.

Yes, I do. Without it, notifications wouldn’t work properly, and I need notifications to work.
However, I don’t have any Google apps installed other than the ones that are installed by default through the App Store of Graphene OS.
With the support for the nested work and private spaces within the owner, it’s generally recommended for the vast majority of users to stick to using the owner profile. You can use the work and private spaces to separate apps like having sandboxed google play services only in the private space, etc.
The owner profile is not an ‘admin’ like on desktop so it’s unhelpful to view it as a security benefit to avoid it. There are also some upstream AOSP bugs which only affect secondary profiles since they aren’t heavily leveraged in the stock OS.
