Basically, a section for removed apps/services/etc and why they’ve been removed.
This would be helpful.
We kind of already have this… We are open source, all changes (and the reasons behind them) can be found on GitHub.

Agreed. I think it would lead to too much discussion and confusion for general visitor. People who are really invested can find the reasoning on GitHub and fora.
Sometimes I do wonder if should explicitly warn against some products claiming to offer privacy. But the list would be huge and unmaintainable.
