I’m considering recycle my old iPad to the retailers. One problem, however, is that I am unsure about what I can do with my iPad, since I just know the reset step in settings. My iPad has stored much sensitive data that I will never want them to be exposed. Please show me the accurate steps or guides involved. Even any other advice you have! Thanks a lot!

Since all modern iPad and iPhones have FBE enabled (and forced) by default, a simple reset of your device would generally be sufficient.
However, if you prefer to make your iPad closer to the factory state, the best possible option is using the DFU(device firmware update) mode.
It’s currently the highest level of reset available for end users. Simply connect your iPad to PC or Mac, run iTunes, and enter DFU mode. Specific procedures for entering the DFU mode vary depending on your iPad model, so search youtube for that.
What’s also important is disabling find my iPad and signing out from your Apple account before performing a factory reset so that your iPad is no longer tied to your apple account.
p.s. Other than reinstalling the firmware, DFU mode and Recovery mode are nearly identical. So if you have trouble entering the DFU mode, it’s fine to use recovery mode instead (which is generally easier to enter)
