I never installed Honey because it was a “free” product that was bought by Paypal for 4 BILLIOB dollars. Well, now they proved that it’s a scam. However I’m wondering if the are any FOSS alternatives to it? Nothing shows up here https://alternativeto.net/software/honey/?license=opensource
Any extension you install that’s interacting with all your purchases should really be avoided.

I did wonder whats stopping one from making an addon that is open source and stores a database of coupon codes submitted by users or such?

In addition to what Fria said: remember that any software/extension you install increases attack surface and that you should only install essential things.
This is especially true for browser add-ons which potentially have access to EVERYTHING you do online.
