How much does having multiple devices harm privacy?

As part of my work, I typically carry 2-3 phones on me at a time from various manufacturers. One of them is my personal phone, which I will potentially put GrapheneOS on, if it truly does come to Samsung Snapdragon phones. The other two cannot have GrapheneOS on them. One is iOS, the other is a Samsung.

I imagine that carrying around multiple devices throughout the day probably isn’t helpful for my privacy. Even if I did get GOS on my personal phone, would the privacy benefits be somewhat negated by having the GPS, camera, microphone, etc. of other phones just constantly following it around, 1:1 all the time?

if potential tracking concerns you, put them in a faraday bag outside of work hours. The only situation where bringing multiple phones with you could hurt you would be a malware infection. Naturally, this is incredibly rare but not impossible. Have you looked into hardening your two work phones?

Generally, you should worry more about keeping personal activities separate from work activities. This situation is a lot better than doing work-related activities on a personal phone. This level of compartmentalization should be enough for most people.
