I believe you can change your numbers. It would be foolish for Apple to not allow simple changes because people do change phone numbers when they travel and whatnot for extended periods of time.
I my experience, you can always change numbers after you’ve made your account and is fully functioning and verified. You can change it or would have an extremely difficult time changing it to a fake one so its just best to use whatever real number you have. Apple is actually good at storing your real numbers safely but who knows who they secretly share it with - I’m inclined to believe they don’t but NSA has long arms.
You say you agree with me and yet you say that you could change or delete it after the account was made. But the point of the OG post and thread is to see if one could make an account to begin using it fully without a real number.
Ehh - either way I think we know what you can or can’t do with Apple creating account wise..

But I wasn’t reply to the OG post, I was replying to a comment, which mentions the ability to change or remove the phone number after the account is created. Am I not allowed to do that here?
That’s your assessment of very limited info (only this thread). If you are new to privacy and security, I do encourage you read up and keep learning, researching to see where Apple falls in the privacy and security realm in comparison to other tech products, services, software, etc.
I am not new to privacy and security. I run my own servers and only use FOSS operating systems so I couldn’t care less about Apple, but the faith people have in Apple is laughable.
Apple is maybe slighter better then some other big tech, but most of their privacy image comes from marketing.

This is not always a valid argument for reputable companies and their products for all that they have shown to be. iOS is not the best but it is the best mainstream option we have with decent privacy measures for the average person and threat model.

That is to say if you totally anonymized (sp)) and obsfucated your Apple ID credentials and creation how could it not become tied to your real identity given usage pattterns, location, etc…

I think you’re absolutely right, if you use an iPhone they will be able to figure out who you are eventually.
On the other hand, I don’t see why they HAVE to make a phone number mandatory (“so you don’t get locked out of your account”) when they can instead offer email 2FA or TOTP 2FA.
