True if you’re not gonna have any sort of Technical support, In a way, big tech like Google and M$ Helps dramatically.
For me I’m willing to go to troubleshoots and stuff like that for the sake of avoiding Microsoft and Google all together but not everyone is as savvy.
Though Threema business I would is hosted on their servers and does have technical support and so is proton but at that.

The office did refuse to switch to proton with custom domain, my cousin’s statement was the nail in the coffin, kept the domestic mail. We were about to get them to proton drive until folder/file share sync was not working correctly. They made a final decision on pCloud which is not ideal.
and I don’t have a selling point for libre/only office or Linux to be frank.

I went back and reviewed the post-mortem of my last major migration, company with ~$100m revenue, 8 offices around the world, heavily regulated defense-related industry (US/EU). It took two years to complete and 6 months of planning. They are an engineering based company, and have their own IT staff due to regulations. They went with onlyoffice on-premise with netapp storage and something like citrix virtual desktops for 90% of the staff. They failed an audit due to their reliance on MS OFfice in the cloud and their inexperienced staff in handling it. It almost cost them a major contract, so that was their incentive to hire staff, consultants, and do it correctly. They also didn’t like MS O365 basically saying that MS AI was going to be included and used to train models (you can opt out of some of this, but not all of it apparently). MS also pushed them into a contract extension and price increase for the “AI” they didn’t want in the first place.
Most of the planning comes down to business process mapping and understanding. This is literally how SAP made trillions over the decades–if only I was that successful.
Once they were done, their audit passed without issue, and being on site with certified people helped it along. Yes, this is commingling a migration from Office365 and business re-organization and scaling, but that’s typically how it is done; at least at this scale.
My company runs on proton for business with custom domain, self-hosted cryptpad, overleaf, and self-hosts as much as possible. We also are all linux/bsd-based virtual desktops. Cryptpad is really onlyoffice, and it takes about a day to get used to if all you’ve used is google/office before. We used to spend $60,000/mo on cloud services (AWS/Azure), but we spent that in hardware/software setup once (capital vs operational expenditures). 99% of people only need Notepad-like functionality to do their jobs. Let me tell you about training our marketing people to use Overleaf(LaTeX) and GIMP vs Adobe Creative Cloud…another time.
Why exactly?
Sadly, there’s not enough budget for now to hire in-house IT and constant supervision. Although maybe a solution like Proton + LO will be easier and more similar priced to Microsoft, except for the possible Excel problems, lack of something similar to Exchange and Teams (collab can be done via Proton Docs). But, lacks some things and control over employees activity with clients as @redoomed1 @Tech-Trooper or @ph00lt0 pointed as well on Paid Microsoft or Google?

Gimp + LaTeX is great and also with libre office draw I have replaced Adobe in my day to day
