Flights from your country to your destination
It is obvious that this data is all documented and it is likely mandatory for them to collect these data. I have never went to any countries before. But I want to know more about this information and from your view on these, and what are your thoughts and strategies to minimize anything, and what to avoid or should avoid.

I don’t think your post is very clear. What are you trying to do or get done and why?
Your post isn’t very clear, but generally there isn’t a whole lot you can do in these cases. (Legal) border crossings and flight passengers are required to be logged so there isn’t much you can do about that. I don’t think we need to tell you that forging a passport would be a pretty bad idea.
Only data you can reduce regarding flights is booking them directly via the airline, not a reseller. (Really, this advice goes for nearly every topic that comes up like banking, payments, whatever… The less middlemen, the less chance of them storing or selling your data.) You can also usually book in-person to avoid e-mail and phone number, but that may be detrimental to the convenience you’re used to.
