How privacy-invasive are apps if you only give them pseudonomous information?

I have been wondering about this question. Say I am using an app like Tiktok, Fitbit, Garmin, or other that collects a lot of data.

If I use a tracker blocker, if I only provide it the minimum amount of data required and the rest as fake information about me (fake name, age, pseudo email, etc), how much of a privacy concern is there really?

What can they actually collect about me, and will they even know it is me specifically, or just some user?

Assuming that information will not be tied back to your real identity, you should be fine. If you fail and get identified, everything will be for nothing.

Accidentally turn on location once and all that “effort” gone
