You could create an alias such as health@yourdomain.tld for places you reasonably trust. I use a few broad categories like that in addition to individual aliases.
The founder is from the UK but Addy itself is hosted in the Netherlands, not sure it should matter where someone was born.
You can always buy an anonymous voucher or use Monero (or any other crypto).
Imagine you share a link to Notesnook notes with a friend.
If you make updates to that note, your friend will not see the updates if they revisit the link.
The only way for them to see the update if is you go in the Notesnook publish settings for your note, and click update. It has to be done manually. It is not automatic.
But yeah, the link doens’t change.

The two biggest feature I really want to see in Notesnook are work spaces, i.e. having completely different profiles for different types of notes (work vs personal), and fixing share links so that they constantly change, with more options for how long the recipient has access to the note.
If Addy actually lets you pay $3 every month, then yes, it is reasonable for people with modest means.
I don’t know. The display name is what you pay attention to more, not the address, so it’s a little weird to me. Addy doesn’t let you choose your prefix for aliases.
If my addy alias was sexy.beaver123@addy.io, and my display name was Jordan Green or Jordan G, recipients would not assume that my last name is Beaver.

The Proxy Store accepts Monero which is the only anonymous cryptocurrency, and cash. I have used it multiple times to buy subscriptions and paid with cash. If you are sending your mail from Europe, it shouldn’t be expensive, as the Proxy Store in based in Germany.
You can also pay the Proxy Store with bitcoin or regular credit card, which is less private, but if you do that you still have some protection, because you’re paying a third party, and not Addy directly. Addy won’t know who you are, but Proxy Store will.
How do you buy Mail Plus and Pass Plus? It doesn’t seem possible.

I very much agree. But maybe people use some Hotmail/Thunderbird/other old proprietary software that maybe pre-fills or completes in their own way?

If you own a domain name, you can meanwhile do that for example customtext@kissu.com but then you do lose quite some anonymity.

If you can go with Proton Pass + Simplelogin Lifetime. No subscriptions, just one time purchase.
For situations you don’t need anonymity (like doctor, bank etc who already know who are you) use subdomain feature in SL. It allows you to get something like hi@your-subdomain.simplelogin.com. But remember NOT to use it where you need to hide who are you (for ex. newsletters) because subdomains unique and whatever you use before @ you still you use same subdomain used only by you

If alias leaks, you can change it, without need of getting tons of spam on real email, which is nearly impossible to change.

Yes. You should delete them, because if ever leaked, bad actors can use varios tactics (eg credentials stuffing, rainbow tables etc) to access them and use for nefarious purposes.

I have been thinking on this and am interested in the lifetime deal but have some doubts.
I will probably go with SimpleLogin over addy.io because I can either a. Go with the lifetime plan and not be stuck in a subscription model or b. Go with a Proton Unlimited plan and have it from there.
So, I have to decide which to do. I will probably need Proton drive storage at some point as I am already at about 4/5. Otherwise, I do not intend to use Proton Pass as Bitwarden is sufficient and I don’t need ALL my eggs in one basket. So, is there a big difference between the free and paid vpn, because, the free one has met my needs so far. Any other reasons to do Unlimited? If not, is just the Proton Drive enough for Unlimited?
You don’t say why you don’t plan on a custom domain. The huge advantage is portability if you ever want to (or have to, hang your head in shame skiff) change your alias provider you have to change every the email address on every single account that you need to keep using. With a custom domain you just move it to a new supplier and your emails stay they same.
A minor advantage is that your mailbox looks cleaner without the addy.io/simplelogin encoding in from/to addresses.
I use addy.io and custom domain with tuta but I confine the addy aliases to the less significant, semi permanent accounts like TripAdvisor, Agoda etc.
I also do not like subscriptions but sometimes they are a necessary evil (like an electricity bill).
I’d also rather be “stuck” in a subscription but free to move to a better service rather than sit there with a service I do not like. And with the burden of needing to then get a subscription after paying a lifetime. 
The more you go into an ecosystem, the harder it is to get away from it.
I value (freedom of choice + better specific tool for 1 given task) more than some savings.
Nothing is eternal and things will go to shit at some point, hence I’d rather not have hard ties and avoid putting all eggs into 1 single cozy basket.
For all the things that can be done DIY or can be done for free without privacy compromises then sure! But software + politics + companies’ mood might change in 1 year, maybe 5 or maybe 10.
It’s easier to drop out from Addy and move to [the new hot FOSS service in town] that way.
If you really don’t care that much and would rather prefer saving money with an all in one solution, then go all in on the Proton ecosystem for sure!

- they also do have quite some KYC overall given that you do have an account under the same roof
- are not the best in terms of their policies + company practices
- I’d rather pay for the best service in their own domain (for the few critical ones)
- the free VPN is very basic but if it’s fine for you, why not?
- Proton Drive also is not as flexible as I wanted it to be for me
- too restrictive as of how I access the data (no WebDav for example)
- not as refined of an experience as I wanted

I would argue that you could also just skip the entire Aliasing system if all you need is a clean mailbox + brand identity because you can also create on the fly usernames.

Where did you see E2EE in webdav? If they allow webdav, this will mean that encryption will be happening on SERVER which will ruin the purpose of Proton, with zero knowledge encryption.
IMHO: If you can, selfhost. If you cannot, go lifetime. Because if you ever forget to renew subscription you can get doomed.
I, for example, ditched banking cards, and sometimes it is a hassle to pay for something. But at least it is private.

I still consider that some things are worth paying for or using a 3rd party. Self-hosting is with it’s own risks/challenges.

It is really for people ready to invest time in it. For example, i have SOME selfhosted servers via .onion links (not to pay for domains or IP) or only in LAN (like immich and NAS), but it is mostly because i trust my hardware and skills.
But maintaining mail server is EXTREME hassle, because if it is down, you can miss important mail (for example security alert from bank).
Shit happens. Remember covid, with overcrowded hospitals and chaos. Sometimes even this not enough.
I prefer permanent solutions. Even if it means that i will spend money once more if i won’t be satisfied. Just for peace of mind.

It is mostly because it would be obvious to many that I am the same person. While this may be okay for accounts with a similar level of PII it isn’t always. I may switch to it one day when I want to make a website and have a secondary reason for a domain but it just isn’t something I feel the need to spend money on now. I understand that may require me to change emails for all my accounts if I do decide I want one but that is fine.

I see that. It is extremely bare bones but I pretty much just use it as long-term storage so it works for me.
Doing the math though, I see that if I can get by with addy.io cheapest tier and then proton drive upgrade it would still be less than unlimited. It would also be better then one time simplelogin unless I used for yearrrsss. 50 aliases is a little low but if I need I would be fine using the standard aliases for accounts with the certain info that would connect them to each other anyways.
If it’s a small thing that you do want to backup files safely to, you can always use AWS Glacier or Backblaze B2 after encrypting your files. Backblaze is 6$/TB/month. If you don’t reach 1TB, they postpone the monthly bill to the next cycle (one where you will reach that threshold), kinda like what Fly or Hetzner are doing.
It is lower level hence cheaper. Yet if long-term storage might not be a big deal to drag and drop some file from time to time.
I have the same question as OP, and have a similar setup (Proton Mail, SimpleLogin Premium, no custom domain). I have a catch-all subdomain with simplelogin, and have unique aliases for each service (amazon, linkedin (have to use it for work unfortunately) etc).
My question is, is it better to use this setup, or to have unique aliases on SL domains first for all services that you know of (like all accounts you already have) - and then use the catch-all for all the other times you need to give out your email? Obviously the first is more convenient.
You kinda self-answered yourself here. 
One is about convenience and portability while the other is about higher anonymity.
No right or wrong answer here, it depends on what you’re trying to achieve.
I do have unique Addy account for everything.
I do have several domains too but never linked them to Addy because it defeats the whole purpose from my opinion (as explained few messages above).
