You can use ReVanced to bypass YouTube Premium restrictions and avoid paying Google for the service and giving them your personal information.

So, TLDR: I want/need to buy YouTube Premium, I was suggested to use Revolut in previous post (with fake name + address), but since it’s a huge hassle to set up a new bank just for this, and that there wasn’t really a concensus on if Revolut virtual card is better than just normal card with fake details, would just using my real card with a fake name achieve the same effect? My threat level is low so I’m not concerned about law enforcement etc, but I’d rather not have Google use my identity for advertising etc

I haven’t tried it myself, so I can’t vouch for it, but it might be worth checking out.
Have you considered Google Play gift cards? Seems like the simplest option.
I’ve tried this when attempting to subscribe to MySudo via Google Play. I made a post about this a while ago. Google may block your attempt to redeem your code and ask you to submit proof of your purchase. Despite this, Google says the information is not “consistent” with my account, whatever that means. Eventually, I just used one of my Revolut cards. If OP intends to use Google gift cards, they should not put more than necessary for their subscription.
Using virtual cards makes it easier to control your subscriptions. It’s not so much about privacy, as you would need to provide your real details anyway.
