I’m considering setting up a network gateway at home to strengthen my privacy — especially since in France there seems to be an increasing push towards surveillance, and I’d like to have more control over what my ISP can see.
I’d like to know whether, in your opinion, Ubiquiti products are truly focused on privacy and security, or if they rely too heavily on proprietary cloud services. And if not, are there any other brands or solutions (open-source or otherwise) you would recommend for a more privacy-respecting setup?

I personally wouldn’t go for Ubiquity even if they gave it for free.
You are just like me and be honest, most of us here living in a surveillance state where the law and rules are only applicable for peasants.
In my country they do dragnet for ages, and client side scanning is well underway. The fact that the law didn’t make it, did not undo the fact that they are already using AI to monitor every device and thus the person too.
Thus, Ubiquitous systems with cloud support and all the features that you agreed upon to use are really well marketed surveillance systems.
I would go for OpnSense or PfSense. The second option is to buy the hardware and install it yourself. The third option is GL•iNet
I have a few of their devices and although I don’t trust them, they are by far the better option than any store bought device. I am not sure what they have in your region, but in BE/DE/NL everything in big retail stores chains are cheaply acquired leftover they want to dump quickly. Since pretty much all of them have known security flaws that can’t be patched (easily). At least that is my experience when I went to several big chains and checked their product against known vulnerabilities and got repos
