About Google tracking "everything"

So I am not sure what I am doing wrong (or right?) when generating the reports. I know I have disabled everything in my Google account since its creation.

I have been using GrapheneOS with PlayServices for a year. Last week, with a new phone I used stock for two days before switching back.
Trying to compare the Data Google collected between GrapheneOS and Stock, I used the Takeout right to download all my history including the activity protocol (for some reason is limited to only one month) which I think the most interesting as everything else is almost empty.

To my surprise there is no difference in the activity protocol between my usage of both Operating systems.

Just a bunch of “PLAY_APP” / Firefox (the few times I accessed Gmail through desktop) / PHOTOs / ANDROID_OS / OTHER_APP.

It seems to me that there is no difference in Google tracking. I am not even sure revoking Google Photo network permission changed anything regarding the Google Photo App.

So I always read that Google tracks everything you do on Stock and I was expecting to find my usage of Apps, of activities logged when I used Stock. But as said before, not much difference.

Are there other places/options to check if Google logged more activities?
