Quick question. For day to day browsing, would it make sense to create an email with Tuta or Proton with a username that is not tied to my real name? Because if I were to store personal documents that would tie that account to my real life identity, would it even make sense?

I would use email aliasing, to start.
Both of those services are end-to-end encrypted so you can store personal documents and it does not really affect anything regardless.
Personally, I would suggest that you just compartmentalize everything so have personal accounts and a personal drive that you use for your personal documents then maybe another one for your online aliases etc
Re email its either anonymous or not and you would have to have really serious opsec to keep an email anon. It’s not practical to have a truly anonymous day to day email.
You can use an email with your real name and just alias and proton drive is e2ee so they wont see that anyway. And just email alias for everything, from both a privacy standpoint but also importantly for spam protection
