There’s an unofficial list of [Matrix homeservers](https://servers.joinmatrix.org/) to choose from. If you wanna find the “best” option, you could skim through the privacy policies of servers accepting new members and use an email alias when signing up. Nothing will be ideal since Matrix itself isn’t the most private or secure [messenger](https://www.privacyguides.org/en/real-time-communication/), hence why Privacy Guides now only recommends it as a [social network](https://www.privacyguides.org/en/social-networks/).
