Technically, wont the Docker/Kubernetes repository sites be a list of selfhosted apps?

I would generally advice against using public selfhosted instances of services meant to store private information. Usually those selfhosted services are meant for personal use or at least to be hosted by someone you know and trust.

Standardnotes supports end-to-end encryption IIRC but many services do not meaning that the admin/owner has full access to your data. Besides that they can decide to shut down the service at any moment without any notice.
