Concerns About Sign In with Google Privacy Issue

I have a Google account that is not registered with Gmail. If I use the “sign in with Google” feature to register on some websites, what privacy risks am I exposed to?

I am concerned about whether the websites have any means to track me persistently across different places. For example, would this share a unique identifier of my account?

Since my Google account is linked to an anonymous alias email that I change frequently, the email information is not traceable.

Google’s description is:

When you use Sign in with Google to access a third-party app or service, Google only shares the following information associated with your Google Account:
-Your name
-Your email address
-Your profile picture
This data is only shared after you give permission. If you want to use Sign in with Google, you can’t exclude any of these pieces of data.
In addition to your name, email address, and profile picture, the third party might request further access to some of your Google Account data.

If I do not allow sharing of other data, will there be any unique identifier of my account shared?
